Easy work dinner: Roasted Cod, Tomato and Chorizo
This recipe is so easy because it requires very little preparation and cooks all together in the oven while you get on with something else.
This recipe is from Lorraine Pascal and I love it. I do it a lot in the week but have also cooked it at dinner parties. You can play around with it by using chicken or prawns and by adding other vegetables. The juices all cook together to make a sauce which is gorgeous poured over cous cous.
Ingredients:
1 piece of cod per person.
10 cherry tomatoes, halved
10 chunky slices of chorizo sausage
1 lemon cut in wedges
2 teaspoons of smoked paprika and thyme
Olive oil
Salt and pepper
Method:
- Preheat your oven to 200C/ gas mark 6.
- Place the cod in a large roasting tin. Arrange the tomatoes, lemon and chorizo around it.
- Drizzle olive oil all over the ingredients and sprinkle the thyme, smoked paprika and salt and pepper all over.
- Cover with foil and roast for 30 minutes, or until the cod is cooked.
This dish is delicious with a green salad, potatoes, rice or cous cous. The juice from the lemon, tomatoes and chorizo make a gorgeous sauce.
